Suji That Melts In Your Mouth.

Deepavali is around the corner. 1 Month and 4 days to be exact. And I am here to share my mother's infamous recipe for making the perfect Suji for your next special occasion; be it Chinese New Year or Hari Raya or even Christmas!

Below are the needed ingredients:

5 tablespoons of Ghee (Clarified Butter)

5 tablespoons of Icing Sugar

a pinch of Salt

2 cups of plain Flour

1 cup of Semolina

Preheat your oven to 170 degrees.

Put in the Ghee (Clarified Butter) and Icing Sugar in a bowl and whisk with a hand whisk.

Upon reaching a creamy texture, put in the salt and continue to whisk till all ingredients are properly incorporated.

Once mixed, add in the 2 Cups of plain flour, put whisk aside and mix with hands. Ensure hands are dry while doing so.

Pour in the remaining ingredient of 1 Cup of Semolina, and continuing kneading with your hands nil the dough holds together and set it aside.

Line a baking tray with Wax/ Baking Paper. Suji's come in small tiny bite sizes. If you aren't particular about wanting your Suji's not being uniform in size and shapes, you could roll them with your hands and give it a lil tap on the top of the roll, so it's a lil bit flat on the top; just the way it's supposed to be.

My brother hates using his hands, so if you are just like him, try use the M-scoop in the smallest size and line them on the trays. And if you want them ti be of the same weight, a weighing scale should help you with that.

Pop them in the oven for 15 minutes. Once you see cracks forming not he top of the sujis, take them out and place them on the cooling rack.

This recipe makes approximately 80pcs of Sujis. Let them cool for about 15 minutes and they are all ready to be popped in your mouth!
